Hearts of Romaine and Radicchio, with hearts of palm, gorgonzola, toasted pistachios, tossed in caramelized shallot vinaigrette.

Faroe Island Salmon, with crab baked in phyllo,
Chicken Saltimbocca, with wild mushrooms, prosciutto, and mascarpone,
Pork Osso Bucco, braised with pancetta, finished in a red wine demi-glace, over wild mushroom risotto
Or
Veggie & Goat Cheese, Zucchini, eggplant, rapini, and baby spinach, sauteed in a sun-dried tomato pesto cream, over fettuccine, topped with goat cheese
